Happy Hour Salsa

  • 4 green onions
  • 3 medium vine-ripe red tomatoes
  • 2 jalapenos, seeded
  • 1 medium green pepper
  • 1/4 cup diced red onion
  • 1/2 (bunch) fresh cilantro
  • 1/4 cup red wine vinegar
  • 3/4 cup Rachel’s Raquette Lake Elixir
  • pinch Kosher salt and freshly ground black pepper
Happy Hour Salsa
  1. Dice the green onions, tomatoes, jalapenos and green peppers and blend together.
  2. Add the red onions. Mince the cilantro and add to the vegetables.
  3. Add the vinegar and finish with Elixir. Season with salt and pepper. Chill before serving.
